With Christmas just around the corner !!

I've specially prepared a very hands-on workshop for the festive season!

Have a great time making, decorating Christmas shaped cookies, cupcakes, brownie and lemon fruits cake with your family.

You will enjoy the oohs and aahs when you serve them to your guests or pack them as lovely homemade gifts for Christmas!
At the end of this class, students will be familiar with techniques on using cookie cutters to shape cookies, decorating the cookies, cupcakes and brownies.

In this hands-on cuppies workshop, 2 groups of eager mommies looks pro in their works tho’ they don't really have much baking experience.

We started with baking the soft marble cupcakes, then follow by oreo & raisin cupcakes,vanilla cupcakes, a simple yet super yummy recipe that requires very little effort and is almost fail-proof.

The ladies have to follow the recipes, work in groups in weighing ingredients etc.

Once the cupcakes are in the oven, the mommies launched into serious piping mode.

Each participant will, most of the time, have their own cuppies to work on and very often are encourage to create their own designed cakes .

Butter cream icing is one of the easiest icing anyone can make.

I tainted the snow white icing with different food colours for our cupcake artists to start their design work.

It will be very hands-on, you will involved in baking the cupcakes, making frosting and ofcourse decorating those cuppies....

Our church (chinese ministry) have a practice to celebrate b'day in the 2nd sunday of the month.
I'm responsible to provide the cake.... :)
Most of the members of chinese service are old folk, so I'm using this type of paper cup, much more easier to tear and easier to eat the cupcakes, no fork and spoon needed...

However, by using the above paper cup, the shape of my cuppies will a bit out, not as round as using white muffin cup...

Baked the below cuppies last nite, decorated it this morning, very rush! thank God still managed to catch company bus :)

2 days ago, I've last minutes report need to be done, can't go dinner with my dear frens..
today will meet them for tea break, my office just next to hers...

This cuppies will make a great gift for hubby or boy friend who angered their partners. :P

too soft till the centre a bit sank when I applied the frosting...

fluffy & super soft......
even when you take it out from fridge and eat it immediately, the texture of the cuppies guarantee soft!

Mango swiss roll

Aunt Yo, thks for the recipes !

1st trial, i think i applied too much whipped cream :)

Ingredients for swiss roll:

4 large eggs or 5 medium size eggs

100 gm. caster sugar

120 gm. cake flour

1 tsp. mango essence

a few drops of yellow colouring

65 gm. cornoil or melted

butterFilling:

100 gm. fresh cream

1 mango - cut into cubes

some mango puree

methods:

(1) Whisk eggs and sugar till fluffy.

(2) Fold in flour, melted butter, mango essence and yellow colouring.

(3) Pour into a rectangular tray (10" x 14") and bake at 200C for 10 mins.

(4) Leave to cool on a wire rack.

(5) Turn cake over onto a piece of greaseproof paper, spread fresh cream on top and sprinkle mango cubes. Roll the swiss roll with the help of the greaseproof paper.

(6) Chill in the fridge before serving.

(7) Slice the cake, spread some mango puree on top and serve.

guarantee this cupcakes texture are super soft yet rich in chocolate :)

hi mommies, there are two type of cupcakes (as i mentioned in my thread):

1. recipes content butter, which you put inside the fridge the cakes become hard, however, this cupcakes are more dense and more sinful.

2. recipes only use vegetable oil, which you put inside the fridge the cakes still soft.

I used the 2nd type from the above recipes to make my hubby b'dae cupcakes.

for the frosting, I'm using both butter cream & whipping cream, so that it will not taste too dense.

Boston Cheesecake

As my family & I doesn't like to eat cheesecake base which made from digestive biscuits, I've replace it with chocolate sponge cake.

SZ (sheng), jacqueline heng, you may try this......

cheesecake with chocolate sponge cake as a base, taste heavenly, the moment you put inside your mouth, it will melt :)

Ingredients for cheesecake base:
250 gr plain sweet biscuits, crushed
¼ tsp ground cinnamon
¼ tsp ground allspice
60 gr butter, melted

Ingredients for cheesecake filling:
500 gr cream cheese
250 gr sour cream
140 gr cater sugar
4 eggs, separated
2 tbs flour
¼ tsp vanilla essence
2 tsp finely grated lemon rind
2 tbs lemon juice

Methods:
(1) Place crushed biscuits, cinnamon, allspice and melted butter in a bowl and mix to combine. Press biscuit mixture over base of a well greased 23 cm springform tin.
(2) For filling: place cream cheese, sour cream, one-third caster sugar, egg yolks, flour, vanilla essence, lemon rind and lemon juice in a large bowl and beat to combine.
(3) Whisk egg white till slightly forthy then gradually spoon in the sugar till finish. Whisk at high speed until forthy adn stiff peak form.
(4) Fold egg white mixture into cheese mixture, spoon into prepared cake tin and bake for 1 hour with oven temperature 180C.
(5) Allow cheesecake to cool in tin, just prior to serving, decorate cheesecake.
(6) To decorate, sift icing sugar over top of cheesecake.

It looks ugly but the taste is heavenly...

Ingredients for chocolate sponge cake:
Egg Yolk Batter:
6 egg yolks
1 egg white
110 ml vegetable oil
120 ml water
2 tbsp full cream milk powder (mix with the water)
1 tsp baking powder
180 gm plain flour
20 gm choco powder

Egg White Foam:
5 egg whites
200 gm fine Sugar

chocolate Butter cream:
125 gm. Butter
125 gm. margarine
80 gm. icing sugar
100 gm. melted cooking chocolate

Methods:
(1) Mix all the egg yolk batter ingredient together, except flour, choco powder & baking powder. mix till those liquids well combine, then put in flour, choco powder & baking powder (shieved together). Stir till smooth and no lump.
(2) Whisk egg white till slightly forthy then gradually spoon in the sugar till finish. Whisk at high speed until forthy adn stiff peak form.
(3) Gently fold beaten egg white into egg yolk batter.
(4) Pour batter into a 25 cm cake pan. Bake at 180C for about 45 mins. or until cooked.
(5) Remove cake from oven and invert the pan onto a wire rack and leave it to cool completely.(6) Remove cake from pan and serve.
(7) For chocolate butter cream, beat butter, margarine and icing sugar till light. Then pour in melted chocolate and mix till evenly mixed.
(8) Apply chocolate cream onto chocolate cake and decorate as desired.

Hi mommies...don't let my triple chocolate cake discourage you from making this....Looks is deceiving.

Today baked cupcakes, Boston cheesecake & Triple chocolate cake
Still work in process, will post the "Final" cakes photo later.

the extra batter from boston cheesecake..... turn become lovely blueberries cheese cupcakes !

Orange Chiffon cake

Ingredients:

Today is a busy and rushy day!

Whole day busy with work...

Went back home to ensure kids are taken care by my helper.. then take dinner, then rush down to Phoon Huat bakerymart to buy cream cheese, choco coating and FONDANT.......

can you beleieve i bot 2kg of cream cheese? so much things in my mind !
from american sour cream cheesecake, chicken cheddar cake, chocolate cream cheese eclair or japanese cheese cake.

I'm drolling now :)

while I'm writing this blog, my two kids are watching Ratatouille DVD, this is the 4th time they repeat it... they loves this movie. went to GV was not enuf, end up bot the DVD oso...
think 'coz they often helped me in the kitchen :)

Their motto now is: EVERY ONE CAN COOK ! ha ha ha...
